
INGREDIENTS
- large egg yolks – 4 PCs.
- garlic – 5 large cloves
- Cayenne pepper – to taste
- ground saffron – 1/2 tsp
- olive oil – 500 ml
- salt – 1/2 tsp
- tomato paste – 1 tsp
STEP-BY-STEP RECIPE
1. Mash in a mortar the garlic with the salt, saffron and Cayenne pepper. Mix the resulting paste with the yolks.
2. Whisking, gradually add olive oil (every 10 sec. coffee spoon of oil) until the sauce thickens.
3. Check whether enough salt and pepper. Chill the sauce.

Rouille in company with croutons and grated cheese is almost mandatory to be served with fish soups. In garlic with spices can add a small baked potato.
